Prepare the Marinade:

In a bowl, mix soy sauce, sugar (or honey), grated ginger, and minced garlic.
Marinate the Chicken:

Add chicken strips to the marinade and let sit for 15-30 minutes.
Cook the Chicken:

Heat oil in a pan over medium heat.
Add the marinated chicken (reserving the marinade) and cook for 5-7 minutes, flipping until browned.
Simmer with Marinade:

Pour the reserved marinade into the pan.
Lower the heat and simmer for 3-5 minutes until the sauce thickens and coats the chicken.
Serve & Garnish:

Sprinkle with sesame seeds and chopped green onions.
